Pregistry’s Friday Recipe: Parmesan Crackers

Did you know how easy it is to make your own crackers?

With just a few simple ingredients – and a mini muffin tin – you can whip up your own delicious homemade crackers! Gluten free and no artificial ingredients either!

Simply whisk egg whites and your favorite spices (we used garlic powder and dried parsley flakes), along with some salt and pepper. Spoon into a mini muffin tin, top with shredded cheese (we love parmesan) and bake!

While perfectly delicious for just snacking out of hand, these little bites are also great as a garnish for salads and soups too!

Parmesan Crackers:

  • 2 large egg whites, at room temperature
  • 1/2 teaspoon each garlic powder and parsley flakes (or 1 teaspoon of any spice, or a combination)
  • Salt and pepper
  • 1/4 cup  + 2 tablespoons finely grated parmesan (or any other sharp cheese)

Pre-heat the oven to 400 degrees; grease a 24-cup mini muffin tin.

Whisk the egg whites, spices and salt and pepper until nice and frothy. Spoon a teaspoon into each of the wells of the muffin tin. Sprinkle with 1/2 teaspoon of the grated parmesan.

Bake for 8 minutes or till edges are golden brown. Let cool slightly before transferring to a wire rack to cool completely.
