Pregistry’s Friday Recipe: S’mores Snack Mix

No campfire needed for these s’mores!

All the flavors of this classic summer treat – whipped up in a deliciously addictive snack mix that can be served any time!

The cereal (choose your favorite!) is divided in half, and coated in a mixture of either marshmallow crème or chocolate and graham cracker crumbs. Serve “as is” or add in a generous amount of torched mini marshmallows and chocolate chips!

S’mores Snack Mix:

  • 1 cup mini marshmallows
  • 3/4 cup confectioner’s sugar
  • 3/4 cup graham cracker  crumbs, from 6 full-sized crackers)
  • 4 tablespoons unsalted butter, divided
  • 1 cup marshmallow crème
  • 4 cups Chex cereal (or any cereal you like), divided
  • 1/4 cup chocolate chips, divided
  • 2 tablespoons almond butter

Line a baking sheet with wax or parchment paper.

Place the marshmallows on a baking sheet and use a kitchen torch (or your broiler) to torch the tops. Pop in the freezer to firm up while you make the rest of the recipe.

Place the confectioner’s sugar in one ziploc bag and the graham cracker crumbs in another bag. Set aside.

In a medium heatproof bowl set over a pan of barely simmering water, melt 2 tablespoons of the butter with the marshmallow creme. Turn off the heat and add 2 cups of the cereal. Stir to coat the cereal completely, then transfer to the bag with the confectioner’s sugar. Close the bag and shake to coat. Spread evenly on one half of your prepared baking sheet.

Wipe out your bowl and melt the remaining 2 tablespoons of butter, 2 tablespoons of the chocolate chips and the almond butter over a pan of barely simmering water. Turn off the heat and add the remaining 2 cups of cereal. Stir to coat the cereal completely, then transfer to the bag with the graham cracker crumbs. Close the bag and shake to coat. Spread evenly on the other half of your prepared baking sheet.

Let the cereal cool for a bit, then transfer to a serving bowl along with the torched marshmallows and remaining chocolate chips.
