It does not get faster or easier than this dinner!
Salmon fillets get broiled in the oven while you make this delicious dressing right in the food processor!
The dressing gets a ton of flavor from fresh herbs, garlic and two types of mustard. Simply spread it on the salmon midway through the baking time and in about 15 minutes dinner is served!
This healthy, easy meal requires nothing more than a side of rice (and maybe a salad!) and lemon wedges for serving.
As easy as this dish is for a quick family weeknight meal, it would also make a perfect dinner party option as you could easily scale it up for guests!
Broiled Salmon with Herb Mustard Dressing:
- 2–3 7-ounce salmon fillets
- Salt and pepper
- 1 clove garlic
- 1/2 teaspoon fresh rosemary leaves (plus sprigs for garnish)
- 1/2 teaspoon fresh thyme leaves (plus sprigs for garnish)
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon coarse grain mustard
- Long grain rice and lemon wedges, for serving
Pre-heat the broiler, placing the rack in the upper third of the oven. Line a baking sheet with foil and spray the foil with non-stick cooking spray.
Place the salmon on the baking sheet and season with salt and pepper. Broil for 2 minutes.
In a small food processor combine the garlic, herbs and both mustards. Process till smooth.
Spread the dressing evenly on the tops of the salmon and return to the oven till the dressing is golden brown and the salmon cooked through (watching carefully to avoid burning), about 6 more minutes.
Transfer to serving plates and garnish with herb sprigs and lemon wedges. Serve with rice.
