Pregistry’s Friday Recipe: Chocolate Almond Butter Freezer Fudge

Homemade fudge is neither complicated or time consuming – and this chocolate-almond butter version is a perfect example!

Just a handful of pantry ingredients and about 10 minutes of prep and you can pop this fudge in the freezer – it will be ready in about 30 minutes and is the perfect snack, dessert or foodie gift!

And while we wouldn’t call this fudge “health food”, it is vegan, gluten-free and refined sugar-free too. So, “healthy-ish” maybe?

Either way you will love it!

Chocolate Almond Butter Freezer Fudge:

  • 1 1/2 cups almond butter, divided
  • 1/2 teaspoon of salt (if your almond butter contains salt you may omit)
  • 1/2 cup melted coconut oil, divided
  • 2 tablespoons honey, divided
  • 1/4 cup unsweetened cocoa powder
  • Flaky sea salt, for sprinkling

Line an 8” x 4” loaf pan with wax or parchment paper, with overhangs on all sides.

If using the salt, mix into your almond butter and divide between two small bowls. Divide the coconut oil and honey between the bowls and add the cocoa powder to one of the bowls. Stir well to combine.

Pour half of the chocolate mixture into your prepared pan; tilt or spread to level. Top with the almond butter mixtuer. Use a small spoon to dollop the remaining chocolate mixture on top, and use a skewer or thin knife to swirl. Sprinkle with flaky sea salt and freeze till firm (about 30 minutes).

Use the paper “sling” to transfer the fudge to a cutting board and cut into squares. Keep frozen till ready to serve.
