Pregistry’s Friday Recipe: One Bowl Chocolate Cake

While fancy, complicated desserts have their time and place, we often find ourselves in need of something fast, simple, no-fuss, yet still delicious.

Say hello to this easy as can be, one bowl chocolate cake!

This cake is moist, fudgy, requires no frosting or decoration, and serves a crowd. It’s as tender as can be but also sturdy, so perfect for taking to a potluck, bake sale, new mom or anyplace else that requires chocolate cake!

The secret is boxed cake mix, with a few extra ingredients that take it next level. And while the bundt pan version shown here is great if you’re serving a large group, you can also divide the batter between two loaf pans and freeze them to have on-hand!

One Bowl Chocolate Cake:

  • 1 box chocolate cake mix
  • 1 4-serving package instant chocolate pudding
  • 4 large eggs, at room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 cup sour cream
  • 12 ounces mini chocolate chips

Pre-heat the oven to 350 degrees; grease and flour a bundt pan and line the bottom with parchment paper.

Beat all of the ingredients, except for the chocolate chips, on medium high for 3 minutes. Fold in the chips and pour into your prepared pan.

Bake till a cake tester tests clean, about one hour. Let cool in the pan on a rack for 30 minutes, then remove from the pan and let cool completely.

Note: You can divide the batter between two 9” x 5” loaf pans, greased and floured. Bake for about 45 minutes and let cool in the pans for 10 minutes before removing.
