Pregistry’s Friday Recipe: Red White and Blue Skewers

Need an easy, fast and festive dessert for a summer celebration?

It doesn’t get better than these charming fruit skewers!

To start, slice up some pound or angel food cake – homemade or store bought! Cut into cubes and toast in the oven. Skewer with your choice of red and blue fruits and serve up with freshly whipped cream!

These look lovely on a dessert spread and are equal parts fancy and homey – which is what every summer celebration should be!

Red White and Blue Skewers:

  • Pound or angel food cake, cut into 1” cubes
  • Assorted berries – raspberries, blueberries, strawberries, blackberries
  • 1 cup well-chilled heavy cream
  • 1/2 cup confectioner’s sugar
  • Bamboo or metal skewers

Pre-heat the oven to broil; set the top rack 7 – 10” from the top.

Place the cake cubes on a baking sheet and toast in the oven, turning to brown evenly on all sides. Remove from oven and set aside.

Place the berries and cake cubes in an alternating pattern onto your skewers; keep chilled till ready to serve.

Whip the heavy cream on medium speed till tracks form. Increase the speed to medium-high and slowly add the confectioner’s sugar, beating till stiff peaks form. Transfer to a bowl and serve with the skewers.
