Pregistry’s Friday Recipe: No Bake Tahini Oat Bars

If you’re looking for a healthy, easy, gluten free snack, look no further than these no-bake tahini oat bars!

Made with just a few simple ingredients, and ready in about 30 minutes, these bars are delicious, sweet-savory and very satisfying – perfect for a mid-morning or afternoon treat!

Even better? They’re super adaptable too! Swap the tahini for your favorite nut or seed butter, the maple syrup for honey or agave and the white chocolate for whatever kind you prefer (or none at all)!

No Bake Tahini Oat Bars:

  • 1 heaping cup oats
  • 1/4 cup almond flour
  • 1 cup + 3 tablespoons tahini, divided
  • 1/2 cup maple syrup
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3/4 cup white chocolate chips
  • Flaky sea salt

Line a muffin tin with 10 liners. Combine the oats, almond flour, 1 cup of the tahini, maple syrup, kosher salt and vanilla in a bowl. Divide between the muffin liners and press in to level. Freeze till firm.

Melt the remaining 3 tablespoons of tahini and the chocolate chips in the microwave or in a double boiler, stirring till well combined. Pour over the frozen bars and use the back of a spoon to spread evenly. Sprinkle with flaky sea salt.

Freeze to set and keep frozen till ready to serve.
