Pregistry’s Friday Recipe: Gluten Free Almond Butter Brownies

Best brownies ever? Also the easiest – and gluten-free too, with only five ingredients!

Simply beat eggs, almond flour and Nutella and pour into your pan. Swirl with a blend of almond butter and maple syrup, bake, cool and serve!

Gluten Free Almond Butter Brownies:

  • 2 large eggs, at room temperature
  • 1/2  cup almond flour
  • 1 1/4 cups Nutella (from a 13-ounce jar)
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup

Pre-heat the oven to 350 degrees and line an 8” x 8” baking pan with parchment paper, leaving an overhang on all sides.

Using your stand mixer, whisk the eggs and almond flour on medium-high for 5 minutes. Microwave the open jar of Nutella for one minute – give it a stir. Reduce the mixer to low speed and slowly pour in the Nutella – continue mixing till well combined.

Combine the almond butter and maple syrup in a small bowl – if it seems very thick you can microwave it for 30 seconds to warm it up.

Pour the brownie mixture into your prepared pan and use a small angled spatula or the back of a spoon to smooth evenly. Dollop the almond mixture over and use a thin knife to swirl through. Bake for 25 minutes and let cool completely in the pan on a wire rack. Use the parchment paper to remove from the pan and cut into squares to serve.
