Pregistry’s Friday Recipe: Fish Tacos

A delicious, simple dinner, ready in a flash!

If you’re intimidated by cooking fish then this recipe is for you. Tilapia is incredibly easy to cook, and a tasty marinade adds tons of flavor to boot.

Marinating the fish also prevents it from drying out; from there it only takes about 10 minutes in the oven. Serve it in lettuce leaves, as shown, or the more traditional tortilla.

And topping options are endless! We love a mango salsa but chopped cilantro, red onion, avocado or sour cream are perfect too!

Fish Tacos:

  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1/2 large onion, chopped
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice (from 3 – 4 limes)
  • Salt and pepper
  • 1 pound tilapia fillets
  • Boston lettuce leaves
  • Lime wedges
  • Salsa, sour cream, diced avocado, chopped red onion, for serving

In a small bowl whisk the olive oil, garlic, onion, oregano, cilantro and lime juice. Season with salt and pepper and pour into a glass baking dish. Add the tilapia and turn several times to coat well. Cover and marinate, chilled, for 1 – 2 hours.

Pre-heat the oven to 425 degrees. Uncover the dish and bake for 10 – 12 minutes, or till fish is just cooked through. Flake the fish into large chunks and let cool slightly.

To serve, place a portion of the fish into your lettuce leaves; serve with lime wedges and your choice of toppings.
