Pregistry’s Friday Recipe: Bourbon Peach Tea Popsicles

Nothing says “summer” like a juicy ripe peach – and these popsicles are the perfect way to savor that flavor long after summer ends!

Whip up a batch of fresh-brewed tea, infused with lots of lemon, and fill your popsicle molds along with fresh sliced peaches.

We’ve added bourbon for a grown up popsicle but feel free to omit!

Bourbon Peach Tea Popsicles:

  • 1 cup granulated sugar
  • Juice and zest from 3 large lemons, separated
  • 6 black tea bags
  • 2 tablespoons bourbon
  • 1 – 2 ripe peaches, thinly sliced

Place the sugar and lemon zest in a small bowl and stir thoroughly. Let sit for an hour, stirring occasionally.

Bring 2 cups of water to a boil and remove from heat. Add the tea bags, cover and let sit for 10 minutes. Discard the tea bags, add the sugar and lemon juice and stir till sugar is dissolved. Add the bourbon and stir again.

Place 3 – 5 peach slices into your popsicle molds.

Pour the tea through a sieve into a spouted measuring cup and carefully pour into your popsicle molds. Cover the molds, insert your popsicle sticks and freeze overnight.

Remove the pops by running the molds briefly under hot water. Transfer the pops to a foil-lined tray and return to the freezer to re-set briefly before serving.
