Pregistry’s Friday Recipe: BBQ Tofu with Jasmine Rice

Many of us are trying to incorporate more meatless meals into our weekly rotation. Problem is, these meals often feel like a sacrifice, rather than something to look forward to.

Enter bbq tofu!

This simple, satisfying dish takes almost no time to prepare and is packed with flavor.

Serve with jasmine rice (a nice change from the usual long grain!) and roasted broccoli for a win-win meal that is good AND good for you!

BBQ Tofu with Jasmine Rice:

  • 1/2 cup jasmine rice
  • 1 block extra firm tofu, pressed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon low sodium soy sauce
  • 1/2 cup barbecue sauce
  • Sesame seeds

Roasted broccoli florets, to accompany.

Pre-heat the broiler to high.

Bring a medium pot of salted water to a boil, add the rice and simmer for 20 minutes, stirring occasionally.

Heat the oil and butter in a medium skillet over medium-high heat. Slice the tofu into 1/2” slices, dip both sides of the slices in the soy sauce and add to the skillet (you’ll work in 2 batches). Cook the tofu till golden brown on both sides, for a total of 4 – 6 minutes. Transfer to a small baking sheet as they finish cooking.

Pour the barbecue sauce over the tofu slices and turn to coat evenly. Place in the broiler and broil for 2 minutes per side.

Drain the rice and divide between 2 serving bowls. Add the tofu to the bowls along with the roasted broccoli. Sprinkle with sesame seeds and serve immediately.
