Pregistry’s Friday Recipe: Baked Feta Pasta

This easy, delicious recipe went viral a few years back for good reason.

It’s not only incredibly easy to make, but it is mostly hands-off and requires so little prep (and hardly any tools!).

Feta and cherry tomatoes are roasted in the oven and tossed with cooked, drained pasta. It’s really that easy and guaranteed to be a hit with the whole gang!

Baked Feta Pasta:

  • 2 pints cherry or grape tomatoes
  • 8-ounce block feta cheese
  • 1/2 cup extra-virgin olive oil
  • 2 garlic cloves, peeled and crushed
  • Salt and pepper
  • 12 ounces of your favorite pasta

Pre-heat the oven to 400 degrees. Place the tomatoes in a baking dish and clear the center for the feta. Pour the oil over all, tossing the tomatoes and turning the feta to coat. Add the garlic cloves and season with salt and pepper. Bake for 30 minutes.

Turn the oven up to 450 degrees and bake for an additional 10 minutes, till the feta is golden brown. Remove from the oven.

In the meantime, cook the pasta till al dente and drain.

Add the drained pasta to the baking dish and toss to coat, breaking up the feta. Season with salt and pepper and serve.
